What would be best for a beginner carving spoons? A spoon gouge or a scorp?

Answer

Neither tool will do all of the work for you. A spoon gouge is a fairly specialized tool which gets it name from the way it is shaped and not because it’s necessarily for carving spoons. Spoon gouges are for carving the bottom of very deep recess’ like you may find in the bottom of a ladle.
If you like carving with a knife and doing very basic spoons, aKN26 hook knife (similar to a scorp) would carve the hollow and a KN12 cutting knife should do the rest.

How hard is the KN26 to keep sharp? Could I use the Flexcut Slip Strop?

Answer

Yes, the SlipStrop can do the job. To strop the inside of the knife you’ll need to rock the blade as you pull it across the part of the strop with the largest radius, since the radius of the knife and strop are different. The outside could be done by using the flat strop and rocking the knife as you pull it across.
